So we stayed in the shelter of the ships to the south and pounded Tovarus' shields down until they were gone. In the gunner's position of a warthog, we blasted him until his health was almost completely drained. We then exited the jeep and dispatched him with SPNKR fire. There are numerous instances of this weapon scattered across the arena, so you should have no difficulty locating one.
You'll also need to keep an eye out for a few more nearby adversaries, although they're not much bothered if you use the shipwrecks to your advantage. There are numerous ranged weapons on a rack outside the ruins that may be used to snipe at your adversaries, making this combat quite simple if you take your time and keep out of harm's way. When you reach this stage, he will doggedly pursue you around the arena, so use your grapple on the floor ahead of you to speed along and give yourself enough room to turn and shoot on him. If you've been strategic in your ammo and weapon selections, you should have plenty of SPNKR ammunition to pound him with, allowing you to make quick work of this final, high-octane portion of the fight. Escharum is no longer alive as a result of this.
